Dainty subterranean Hackney haunt, Behind This Wall, has just unveiled its new autumn menu. The selection brings together the season’s boldest flavours, taking influences from across the globe. Inspired by the richness of the New England Fall, as well as the warmth of an Indian Summer, it features heady spices such as garam masala extract, cardamom tonic and naga chilli molasses, which complement and contrast the rich russets of New England – think absinthe-flamed maple bourbon cherries and cold apple cedar smoke.
Blurring the boundaries between food and drink, the cocktails are gastronomic experiences in themselves – and who doesn’t love a Martini garnished with an exploding booze-filled sphere? Thoughtfully grouped into aperitifs, digestifs, highballs and pousse-cafes, favourites include the Hail Mary: blended Scotch, clam chowder oyster, garam masala extract, Chesapeake seasoning, tomato, beetroot & celery juice, pickle juice, lemon sea foam and timut pepper; and the Salem Witch Reviver: white rum, coffee liqueur, maraska liqueur and maple-candied apple.
A short but sweet selection of bar snacks can also be enjoyed within the minimal Scandi-Japanese aesthetics of the basement bar. With an emphasis on raw eating and punchy, simple flavour pairings, it includes treats like spiced cashews; lime pickled onion toast; and a pumpkin oyster poke bowl with black rice and lemon sea foam.
After a successful pop up at events hub, Oval Space, Behind This Wall found a permanent home for cleverly curated evenings of music, poke and cocktails in March of this year.
