Oh how we adore the Queen — and since she’s recently turned the ripe old age of 90, we feel this not only requires rapturous cheers and serious applause, but other such celebratory tributes that linger longer than the day itself.
And what could be better than a cocktail created purely in honour of her birthday? Galvin at Windows has done just that with the new Lilibet cocktail. The cocktail uses all of her favourite flavours and have been used to compliment each other, giving the drink balance: Gin (her spirit of choice), Dubunnet (the aperitif she drinks before lunch), Earl Grey (her favourite tea), and orange mandarin bitters.
The inspiration for the cocktail goes beyond just the ingredients with the presentation and name completing the picture. Apparently on her last visit to Galvin at Windows, she wore purple; the gold represents the golden age of the 1920s (decade she was born); and the name Lilibet because it is her nickname (gaw… tissue!).
Few restaurants offer such enthralling views of London, but the sweeping panorama from Galvin at Windows up on the 28th floor of the Park Lane Hilton is incredible. It’s the perfect place to sip on a Lilibet cocktail and raise a glass to Queen Lizzy.
