Polygon pop-up returns to Ribot at Seven Dials this week for a series of dining experiences and gourmet collaborations running throughout the summer. Their launch night takes place on Friday 3rd June with Taiwanese street food Baby Bao; followed on Saturday 4th by The Guerilla Grill, featuring Levantine-inspired street food.
Friday’s menu at Baby Bao features a selection of authentic Taiwanese ‘Bao’ – lightly steamed buns with options including mushroom, fish, pork belly, Korean chicken and matcha tea ice cream. Street food favourites The Guerilla Grill take over the space on Saturday with a menu featuring hand-stretched Arabic breads and ethically sourced meats, including grilled octopus on squid ink flatbread.
Polygon’s summer pop-ups at Ribot involve a series of collaborations with Brighton’s leading chefs and breweries; from gourmet leaders 64 Degrees and The Set to award-winning ethical market food such as Ahimsa and The Troll’s Pantry (backed up of course by the best craft beer in town, courtesy of Brighton Bier and Brewdog).
